Soften the sliced onion in 50 g of olive oil with some salt for 10 minutes. Add the sliced mushrooms and cook for 10 minutes. Pour in the cream and simmer gently until thickened; add pepper.

Peel and dice the potatoes. Dry and fry in batches in hot oil until tender and golden. Drain, season and add some parsley.

Brown the pork belly on both sides in a dry pan until fully cooked and crisp. Remove and set aside.

Add 25 g of oil to the pan and cook the sea bass skin-side down first. Turn and finish cooking until the centre reaches 63°C, around 6–8 minutes in total depending on thickness. Serve with the sauce, potatoes, pork belly and remaining parsley.
