Let’s get cooking

Method

  1. Use fresh cooking chorizo, txistorra and longaniza sausages. Pat them dry straight from the refrigerator.

  2. Preheat the air fryer to 180°C. Plan for 3 air-fryer batches; the stated total is an estimate for that schedule.

  3. If your basket needs more batches, allow extra time and do not stack the food.

  4. Arrange the chorizo and fresh longaniza separately without piercing. Cook at 180°C for 14-18 minutes, turning after 9 minutes.

  5. Cook the txistorra at 190°C for 9-11 minutes, turning after 6 minutes.

  6. Check that all the sausages reach at least 71°C in the centre and rest for 3 minutes.
