Method

  1. Combine the flour, yeast and salt. Add the yoghurt and mix until no dry flour remains. Knead for 8–10 minutes; the dough will be slightly sticky but should hold its shape.

  2. Cover and rise for 60–90 minutes until noticeably expanded. Divide into eight pieces of about 50 g and shape into balls. Flatten to about 2 cm thick, cover and prove for 30–45 minutes.

  3. Preheat the empty air fryer for 5 minutes at 160°C. Bake in two uncrowded batches of four for 10–12 minutes at 160°C. Turn for the final 2 minutes if needed. The crumb should be cooked, without a band of wet dough in the centre.

  4. Cool on a rack for 15 minutes and serve two rolls per person.
