Keep the puff pastry cold, unroll it and sprinkle the sugar over the surface. Cut the circle into eight equal triangles.

Roll each triangle from the wide base towards the tip without tightening it too much. Tuck the tip underneath and gently curve the ends. Beat the egg and brush a thin layer over the tops.

Preheat the empty air fryer for 5 minutes at 180°C. Cook two batches of four spaced-out pieces for 10–12 minutes at 180°C. Check that the bases and inner layers are cooked; if needed, turn near the end and add 1–2 minutes.

Cool on a rack for 5 minutes and serve two per person. Keep the second batch refrigerated while it waits.
