Sprinkle 15 g of the sugar on a clean work surface, place the cold puff pastry on top and sprinkle another 15 g over it. Gently roll to press the sugar in without thinning the pastry too much.

Roll both long sides towards the centre until they meet. Refrigerate for 20 minutes and cut into 18 slices about 1 cm thick.

Beat the egg and brush a thin layer over the slices. Sprinkle the remaining 5 g of sugar over them.

Preheat the empty air fryer for 5 minutes at 180°C. Cook three batches of six spaced-out pieces for 10–12 minutes at 180°C, turning after 8 minutes. Watch near the end: sugar quickly goes from golden to burnt.

Transfer to a rack with a spatula and cool for 5 minutes before eating. Serve three per portion; the timing includes chilling and all batches.
