Method

  1. Soak the gelatine in cold tap water. Peel and stone the nectarines and blend the flesh with 20 g sugar.

  2. Heat the 30 ml water in a saucepan. Remove from the heat and dissolve the drained gelatine. Mix with a few spoonfuls of purée first, then with the remaining nectarine.

  3. Whip the chilled cream with the remaining 20 g sugar. Reserve 3 spoonfuls in a piping bag. Gently fold the purée into the remaining cream.

  4. Divide between 4 glasses and refrigerate for 2 hours until set. Decorate with the reserved cream and washed redcurrants.
