  • Rice Uncooked short-grain rice 200 g
  • Water For cooking the rice; extra cold water to soak the gelatine 1200 ml
  • Milk Whole milk 700 ml
  • Sugar 175 g
  • Lemon Yellow peel of 1 lemon only, no white pith; approximate weight, removed after infusing 8 g
  • Cinnamon 2 sticks (about 4 g) for infusing and 2 g ground cinnamon to finish 6 g
  • Gelatine Five 2 g leaves; check pack weight and instructions 10 g
  • Digestive biscuits For the base; check the allergens on the pack 130 g
  • Butter For the base 60 g

Method

  1. Line the base of a 20 cm springform tin. Crush the digestive biscuits and combine with the melted butter. Press into the base and chill while making the filling.

  2. Heat the milk with the lemon peel and cinnamon sticks. Remove from the heat just before boiling and infuse for 10 minutes. Remove the peel and sticks.

  3. Simmer the rice in 1200 ml water for about 20 minutes. Drain any remaining water.

  4. Add the rice to the infused milk with the sugar. Cook gently for about 20 minutes, stirring, until tender but still creamy.

  5. Soak the gelatine in cold water for the last 5 minutes. Remove the pan from the heat and stir in the squeezed gelatine leaves until dissolved.

  6. Pour over the base. Allow the intense heat to subside, then refrigerate for 6–8 hours until set. Unmould and dust with ground cinnamon before serving.
