Peel the potatoes and cut them into even chips about 1 cm thick so they cook at the same rate.

Rinse the chips several times until the water runs clear, then soak them in very cold water for 20 minutes. This removes surface starch that would prevent crisping.

Drain the potatoes and dry them thoroughly with a clean cloth. Preheat the air fryer to 180°C for 5 minutes.

Toss the dry potatoes with the olive oil until lightly coated. Place them in the basket without overcrowding, cooking in two batches if necessary.

Cook at 170°C for 10 minutes, shaking the basket halfway through to redistribute the chips.

Increase the temperature to 190°C and cook for another 6-8 minutes, shaking again halfway through, until the potatoes are golden and crisp.

Transfer the potatoes to a serving dish, season with the salt while hot and serve immediately.
