Let’s get cooking

Method

  1. Soak the beans in water for 12 hours and drain.

  2. Chop one spring onion, peel and dice the pumpkin and peel the garlic. Cook spring onion in 45 ml oil for six minutes; add pumpkin and garlic and cook for eight minutes. Blend with a hand blender.

  3. Put beans in the pressure cooker with the purée, one litre water and some salt. Close and cook for 15–20 minutes from reaching pressure. Turn off and let pressure drop completely before opening, about 15 minutes.

  4. Finely dice the other spring onion and courgette. Cook in a frying pan with 45 ml oil for 15 to 20 minutes until soft and without excess liquid. Drain and cool slightly.

  5. Mix the warm vegetables with beaten eggs, paprika and remaining salt. Heat frying oil in a pan and drop in small portions using two spoons.

  6. Fry in batches on both sides until golden and set inside. Drain on absorbent kitchen paper. Serve with beans and chopped parsley.
