Method
-
Shell and devein the prawns and reserve the tails. Brown the heads and shells in 15 ml oil. Add the chopped onion, carrot, leek, celery and 3 g garlic and cook for 5 minutes. Add all 2.5 litres water, the cleaned hake head and rock fish and 5 g salt. Simmer gently for 22 minutes and strain through a fine sieve.
-
Rinse the clams, discarding broken shells or any that do not close when tapped. Steam in a covered pan with a little water for 3–5 minutes; discard any that remain closed. Sauté the prawn tails in 10 ml oil for one minute.
-
Heat the remaining 35 ml oil in an ovenproof paella pan. Add the remaining 6 g garlic, sliced, and the noodles and stir for 2–3 minutes until golden, not burnt. Pour in 750 ml hot stock, season with the remaining 3 g salt as needed and cook for 5 minutes. Refrigerate or freeze the leftover stock.
-
Add the clams and prawns and finish under the oven grill at 220°C for 3–5 minutes, watching carefully. The noodles should be tender without excess stock, and the prawns opaque and cooked through.
