Let’s get cooking

Method

  1. Clean the cuttlefish and cut into 1 cm cubes. Peel and devein the prawns. Chop the pepper and garlic. Heat the stock and stir in the squid ink.

  2. Heat 30 ml oil in an approximately 32 cm paella pan and fry the cuttlefish for 5 minutes. Add the remaining 30 ml oil, pepper and garlic and cook for 5 minutes.

  3. Add the grated tomato and cook for another 5 minutes.

  4. Stir in the rice for one minute. Pour in all 900 ml hot ink stock and season with the salt, allowing for the stock.

  5. Spread out the rice and cook for 8 minutes over a high heat and 10 minutes over a low heat without stirring.

  6. Arrange the prawns on top for the final 5 minutes; they should be opaque and cooked through. Check that the rice is tender, remove from the heat and rest for 5 minutes. Divide all 120 g aioli between the servings.
