Method

  1. Season the pork ribs with salt and pepper and place them in a roasting dish.

  2. Mix the tomato sauce with the sugar, white wine vinegar and 100 ml water. Coat the ribs with the sauce.

  3. Roast at 210°C for 80–90 minutes, turning and basting every 20 minutes.

  4. Add the remaining water if the tray begins to dry out and finish with a caramelised surface and tender meat.
