Method

  1. Preheat the oven to 190°C. Wrap the garlic with a few drops of the measured olive oil and roast for about 25 minutes, until soft.

  2. Put the water, soy sauce, potatoes and shallots in the pressure cooker, respecting its fill limits. Cook for 5 minutes after reaching pressure. Release pressure according to the manufacturer and carefully remove the vegetables.

  3. Add the pork ribs and a few sprigs of parsley to the liquid. Cook for 20 minutes after reaching pressure. Wait until the cooker has fully depressurised before opening and remove the ribs.

  4. Blend the roasted garlic with the mustard, apple cider vinegar, lemon juice and zest, remaining oil and remaining parsley.

  5. Increase the oven to 240°C. Arrange the ribs and vegetables in a dish and brush with half the sauce. Bake for 5 minutes, add the remaining sauce and brown for another 5 minutes, watching carefully to prevent burning. Divide between 4 plates.
