Method
-
Wash the Swiss chard thoroughly, separate the leaves from the stalks and remove only damaged parts and tough strings. Cut the stalks into 1 cm pieces and the leaves into wide ribbons. Finely chop the onion and garlic separately.
-
Bring the water to the boil in a large saucepan. Add the stalks and simmer for about 8 minutes. Add the leaves and cook for another 3–4 minutes, until a knife passes easily through the stalks and the leaves are tender.
-
Drain the chard in a colander and press gently with a spoon to remove excess water without crushing it into a puree.
-
Heat the olive oil in a large frying pan over a medium-low heat. Cook the onion for about 8 minutes, stirring, until soft. Add the chopped garlic and cook for another minute without letting it brown too much.
-
Take the pan off the heat, add the paprika and stir for 15–20 seconds in the residual heat. Immediately add the drained chard, vinegar, cinnamon and salt. Return to a medium-low heat and toss for about 3 minutes to distribute the dressing and evaporate remaining moisture.
-
Divide between two plates and serve hot as a side dish.
