Method

Beat the egg with the sugar and 45 ml olive oil. Mix in the vanilla extract and natural yoghurt.

Mix the flour with the baking powder and add in two batches. Stir until the batter is thick and smooth, then transfer to a piping bag.

Grease a frying pan with the remaining 5 ml oil. Pipe small pancakes and cook over a low heat for about 2 minutes per side. Repeat in batches to make about 18 pancakes.

Wash and chop the strawberries. Serve 3 pancakes per person with icing sugar and the fruit on top.
