Boil the potatoes whole and unpeeled for 25-30 minutes until very tender. Drain, let the steam escape, peel and pass through a potato ricer.

Mix the mash with the cornflour, garlic powder, onion powder, cayenne chilli, salt and black pepper. Knead only until smooth and firm enough to hold its shape.

Roll the mixture between two sheets of baking paper to 1.5 cm thick, shape into a rectangle and freeze for 30 minutes. Remove the paper and cut into even sticks.

Preheat the air fryer to 200°C for 5 minutes. Arrange the sticks apart, spray with the olive oil and cook at 190°C for 10-12 minutes, turning halfway.

Mix the cream cheese, mayonnaise and sriracha sauce until smooth. Serve the spicy dip with the freshly cooked potato sticks.
