Method

  1. Grind the almonds and sugar for 30 seconds at speed 10. Add the softened butter, flour, vanilla extract and salt. Mix for 10 seconds at speed 4 and finish combining with the spatula.

  2. Shape 40 small balls and place apart on a lined baking tray. Bake at 160°C for about 30 minutes. Leave to cool completely.

  3. Chop the dark chocolate for 10 seconds at speed 8 and melt for 5 minutes at 50°C, speed 2. Sandwich the biscuits in pairs with a little chocolate between their flat bases. Let the filling set before serving.
