- Beer pale lager 200 ml

- Extra virgin olive oil 20 g sauce and 20 g meatballs 40 g

- Thyme 1 g
- Parsley 3 g

Chop 12 g garlic, the onion and carrots. Soften with 20 g oil in a saucepan for 15 minutes. Add the beer, boil for 2 minutes, then add the stock, rosemary and thyme. Simmer for 15 minutes. Remove the herb stems and blend the sauce.

Mix the beef with the ham, the remaining 6 g chopped garlic, eggs and breadcrumbs. Shape about 30 meatballs, 3 cm across, and lightly coat with flour.

Brown the meatballs in batches in a non-stick pan with the remaining 20 g oil, turning for 5–6 minutes. Add to the sauce and simmer for 12–15 minutes until the centre reaches 70°C for 2 minutes.

Taste the sauce before adding salt and finish with chopped parsley. Divide the meatballs and sauce between six plates.
