Heat the oven to 190°C. Mix the pork and beef with the egg, garlic powder, breadcrumbs and pepper. Spread into a rectangle 2 cm thick on baking paper.

Spread with the pâté, lay on the ham and bacon leaving the edges clear, and roll up using the paper. Seal the meat and place seam-side down. Wrap in the paper, then foil; bake for 40 minutes. Uncover and cook for another 10–15 minutes until the filling reaches 74°C at its centre. Rest for 10 minutes.

Soften the chopped spring onion in a saucepan with 20 g butter for 7 minutes. Stir in the flour for 1 minute. Add the white wine and boil for 2 minutes; gradually add the stock and sliced black olives. Simmer for 10 minutes.

Off the heat, stir in the remaining 15 g butter and parsley. Taste before adding salt. Remove all wrapping, slice the meatloaf and serve with the sauce.
