Method

  1. Preheat the oven to 180°C, conventional heat. Grease twelve muffin moulds of about 200 ml with 10 g butter and dust with the breadcrumbs, tapping out the excess.

  2. Put the flour, sugar, 100 g softened butter, cinnamon, ground cloves, bicarbonate of soda, baking powder, eggs and beer in the bowl. Mix for 40 seconds at speed 4.

  3. With the machine stopped, scrape down and finish combining with a spatula. Divide the batter between the moulds, filling no more than three-quarters full.

  4. Bake for 20–25 minutes, until golden and a skewer inserted into the centre comes out without raw batter. Rest for 5 minutes, turn out onto a wire rack and leave to cool slightly.

  5. Dust the slightly cooled muffins with icing sugar and serve one per portion.
