Melt 75 g sugar over medium heat into golden caramel and divide between four flan moulds. Heat the milk with the cinnamon until it just boils, remove and cool slightly for 15 minutes, then remove the cinnamon.

Beat the eggs with the remaining sugar and gradually add the warm milk. Peel, core and dice the pear and sauté in butter for 4–5 minutes. Divide between the moulds and pour in the egg mixture.

Place the moulds in a baking dish with hot water halfway up their sides and bake at 170°C for 20–30 minutes, until the centres are set. Cool for 30 minutes, chill for 2 hours and unmould. Serve with mint.
