Let’s get cooking

Method

  1. Season the 400 g bone-in ribs with some salt and black pepper. Brown in a shallow pan with 60 ml oil for ten minutes, turning. Add sliced chorizo and cook for three minutes. Remove the meats.

  2. Peel and chop garlic and spring onion and trim and chop the pepper. Cook in the same pan with the remaining 30 ml oil for ten minutes.

  3. Chop the sun-dried tomatoes and add with saffron. Pour in the wine and boil for two minutes.

  4. Add rice and meats. Pour in hot water and cook for 16 to 18 minutes over medium heat until rice is tender and meat cooked. If the rice needs more liquid, add hot water gradually.

  5. Taste for salt and serve on four plates with chopped parsley.
