Let’s get cooking

Method

  1. Peel and chop garlic and spring onion. Deseed and chop the pepper. Cook in a shallow saucepan with 45 ml oil for eight minutes.

  2. Season the four whole chicken thighs with some salt and black pepper and add to the pan. Brown for six minutes, turning. Pour in the wine, boil for two minutes and add cleaned mushrooms in strips.

  3. Cover and braise for 25 to 30 minutes, turning halfway. Check it is cooked near the bone, reaching 75°C at the centre without touching bone.

  4. Meanwhile, heat 45 ml oil in another saucepan and add rice. Stir for one minute, remove from the heat and stir in paprika. Immediately add hot stock.

  5. Cook the rice for 18 minutes or the pack time until tender. Taste before adding more salt.

  6. Divide rice between four plates and top each with one drumstick and some mushrooms and sauce. Scatter chopped parsley over.
