Clean the borage, removing leaves and tough fibres. Cut the stems into 5 cm pieces and boil in salted water for 10–15 minutes until tender. Drain.

Chop the garlic and ham. Cook in the oil for 2 minutes, add the wine and boil for 2 minutes. Add the borage and sauté for 3–4 minutes.

Mix the cottage cheese with chopped sun-dried tomatoes, black olives and green olives. Add the chopped capers, mint and walnuts and the paprika. Serve over the borage and finish with parsley.
