Method

  1. Rinse the basmati rice until the water runs clear. Cook according to the packet, then rest, covered, for 5 minutes.

  2. Heat the extra virgin olive oil in a saucepan. Soften the onion with a pinch of salt for 8 minutes.

  3. Add the garlic and ginger and cook for 1 minute. Stir in the curry powder and cumin for 30 seconds.

  4. Add the crushed tomatoes and cook over medium heat for 8 minutes to reduce their liquid.

  5. Add the chickpeas and stock. Simmer for 12 minutes, crushing a few chickpeas to thicken the sauce.

  6. Adjust the salt, add lemon juice and serve with the basmati rice and fresh coriander.
