Let’s get cooking

Method

  1. Blanch (briefly immerse in boiling water) the 12 cabbage leaves in boiling water for 3–4 minutes until flexible. Drain, cool and shave down the thick ribs without cutting through the leaves. Parboil the rice in a separate pan of plenty of water for 10 minutes and drain; it will finish cooking in the oven.

  2. Finely dice the onion, carrot, courgette and mushrooms. Heat all 35 ml oil in a large frying pan and soften the onion and carrot for 8 minutes.

  3. Add the courgette and mushrooms and cook for another 8 minutes until their liquid evaporates.

  4. Remove from the heat and mix in the rice, paprika, pepper and 3 g salt. Divide between the leaves, fold in the sides and roll up.

  5. Preheat the oven to 190°C. Mix the tomato sauce with all 450 ml stock and the remaining 2 g salt, allowing for any salt already in the stock. Spoon a thin layer into an approximately 30 × 22 cm baking dish, arrange the rolls seam-side down and pour over the remaining sauce.

  6. Cover with an ovenproof lid and bake for 30 minutes. Check that the rice is tender.

  7. Cook for another 5 minutes if necessary. Serve the rolls with their sauce.
