Toast the bread. Slice the tomato and the flesh of the avocados. Season with the salt and pepper.

Cook the pork belly in a pan without added oil for 3–4 minutes per side or until golden and thoroughly cooked. Transfer to a plate.

Heat the oil in a non-stick pan and cook the four eggs in batches until the whites are firm. Turn carefully to set the yolks if preferred; vulnerable people should have fully set yolks.

Assemble four sandwiches: divide the avocado, tomato and Gouda between four toasts, then add two pork belly slices and one egg to each. Sprinkle with the parsley, top with the remaining bread and serve immediately.
