Let’s get cooking

Method

  1. Check the mackerel fillets and remove the central pin bones by cutting a narrow strip on each side. Cut the fillets into pieces.

  2. Wash the potatoes and cook whole in the pressure cooker with enough water for eight minutes from reaching pressure.

  3. Turn off the heat and allow pressure to release fully before opening. Peel the warm potatoes and mash in a bowl with butter, mustard, milk, some salt and chopped parsley.

  4. Heat half the oil in a frying pan with two chopped garlic cloves and the whole cayenne pepper. Add half the fish and salt; sauté for 2–3 minutes until cooked through.

  5. Remove the fish and repeat with the other two garlic cloves, remaining oil and remaining fish. Divide the mash and mackerel between four plates and spoon over the garlic oil.
