Method

  1. Mix the vinegar, 65 g of olive oil, rosemary, thyme and 3 chopped garlic cloves. Add the pork tenderloin, onion, pepper and half the salt. Cover and marinate in the fridge for 30 minutes.

  2. For the tzatziki, mix the Greek yoghurt with the cucumber, remaining garlic, lemon juice, mint, 15 g of oil and remaining salt. Refrigerate until serving.

  3. Thread the meat and onion onto 4 skewers. Cook on a hot griddle, turning to brown every side, for around 12–15 minutes depending on thickness. Do not brush the cooked skewers with the raw marinade.

  4. Check the centre of the pork pieces: they should reach at least 63°C, followed by a 3-minute rest. Serve with the tzatziki and parsley.
