Mix the minced beef with the finely chopped spring onion, 4 g of mint, parsley, lemon zest, garlic powder, ground ginger, cumin, turmeric and hot paprika. Add salt and pepper.

Shape 8 firm cylinders around skewers. Heat the griddle with the olive oil and cook, turning, for 10–15 minutes, until the centre reaches 71°C.

Mix the Greek yoghurt with the mayonnaise, chopped gherkins and remaining mint. Taste and adjust the seasoning.

Warm the pitta breads, open each one and spread with sauce. Place a kebab inside each bread and remove the skewer before serving. Allow 2 per person.
