- Garlic 6 g
- Peas shelled 150 g
- Fish stock 1 litre; reserve 200 ml 1000 g
- White wine 100 ml 100 g
- Extra virgin olive oil 35 g
- Parsley 3 g
- Salt to taste 1 g

Method

Check and rinse the clams; discard cracked shells and open ones that do not close when tapped. Toast the noodles in a dry frying pan for 3–4 minutes, stirring, and set aside.

Chop the spring onion and garlic and soften in the oil for 8–10 minutes. Pour in the white wine, boil for one minute and add the clams. Cover and remove as they open over 3–5 minutes; discard unopened ones. Strain the liquid through a fine sieve and return it to the pan with the softened vegetables.

Add the noodles, peas and 800 ml hot fish stock. Cook for 10–12 minutes or the packet time. Add some of the reserved 200 ml stock if it dries out before the pasta is tender.

Return the clams for the final minute to heat through. Taste before adding salt, finish with parsley and serve immediately.
