Method

  1. Season the rabbit with the salt and pepper. Brown in the oil for 8–10 minutes in a wide casserole. Add the chopped leeks and soften for 6 minutes, then add the grated tomatoes and cook for another 6 minutes.

  2. Add 900 g hot stock, cover and simmer for 25–30 minutes until the rabbit is nearly tender. Add the diced courgette and the reserved 200 g stock and bring back to the boil.

  3. Add the rice and spread it out. Cook uncovered for 5 minutes over a medium-high heat and 10 minutes over a medium-low heat. Place the prawns on top and cook for another 3–4 minutes until opaque and the rice is tender. The rabbit must be fully cooked and come away easily from the bone.

  4. Remove from the heat, rest for 5 minutes and add the parsley. Divide between four plates, sharing the rabbit and six prawns per person.
