- Spinach washed 300 g
- Desalted cod boneless 200 g
- Turnip peeled 120 g
- Onion 180 g
- Garlic 4 cloves; half sofrito, half fish 12 g
- Pumpkin peeled 200 g
- Vegetable stock 1 litre, hot 1000 g
- Extra virgin olive oil 25 g rice and 15 g fish 40 g
- Parsley 3 g
- Salt to taste 1 g

Chop the onion and half the garlic. Soften in 25 g oil in a casserole for 6 minutes. Cut the turnip and pumpkin into 1 cm cubes, add them and cook for another 5 minutes.

Add the rice and hot vegetable stock. Simmer for 14 minutes, stirring only at the beginning.

Heat the remaining 15 g oil in a frying pan. Add the remaining chopped garlic, cook for 30 seconds, then add the flaked cod and chopped spinach. Sauté for 2 minutes.

Transfer everything to the rice and cook for 4–6 minutes until tender and the cod is opaque and flakes easily. Taste before adding salt, finish with parsley and serve on four plates.
