Wash the cucumbers and tomatoes. Cut the cucumber into 5 mm half-moons, chop the tomatoes and thinly slice the onion.

Combine the vegetables with the olives. Whisk the oil with the lemon juice and salt and toss through the salad.

Divide between four plates and arrange the drained sardines on top without breaking them up. Finish with chopped mint and parsley.
