Let’s get cooking

Method

  1. If the honey is very thick, warm it for 5 seconds in a microwave-safe bowl. Stir and repeat for a few seconds if needed, without boiling. Stir the honey into the Greek yoghurt, then mix in the almond flour to make a smooth, shapeable dough.

  2. Spread the dough on baking parchment to about 7–8 mm thick. Shape it into a broad heart with two lobes, about 20 cm across. Trim the parchment close to the dough so it does not protrude or sit loose.

  3. Place the palmier and its parchment in the air fryer basket. Cook at 180°C for 10–12 minutes. Check at 10 minutes and remove when the edges are golden and the centre is firm.

  4. Transfer the base to a rack and cool for about 15 minutes. Chop the dark chocolate and melt it in short microwave bursts, stirring between each. Spread a thin layer over the top with a spatula.

  5. Chill for about 20 minutes or until the topping is set. Cut the palmier into four portions.
