Melt the butter in a frying pan over medium heat. Stir in the flour for 2 minutes, then gradually whisk in the warm milk.

Cook over low heat for 10–12 minutes until very thick. Turn off the heat, add the dark chocolate and stir until completely melted.

Spread the filling in a shallow container and cover the surface. Refrigerate within 2 hours and chill for at least 4 hours until it can be shaped without being excessively sticky.

Divide into 18 small portions. Crush the digestive biscuits and beat the eggs separately. Coat the croquettes in egg, biscuit crumbs, egg and biscuit crumbs again, sealing every surface. Place in the freezer for 20 minutes to firm the outside without freezing them solid.

Preheat the empty air fryer for 5 minutes at 170°C. Brush the pieces with the olive oil and cook three batches of six for 7–9 minutes at 170°C. Turn carefully after 5 minutes and remove when the coating is dry and golden, before the filling leaks.

Mix the sugar with the cinnamon and sprinkle over the warm croquettes. Rest for 3 minutes and serve three per person: the filling retains a lot of heat.
