Method

  1. Remove the tough membrane from the rack if present. Season the pork ribs with the salt and black pepper.

  2. Mix the oregano, thyme, garlic powder, sweet paprika, ginger and nutmeg; rub over the ribs.

  3. Place the ribs in a bag with the water, massage and marinate in the refrigerator for at least 2 hours.

  4. Preheat the air fryer to 190°C for 5 minutes. Wrap each piece in foil and cook at 170°C for 30 minutes, turning halfway.

  5. Carefully open the foil, brush the ribs with the barbecue sauce and cook uncovered at 190°C for 12-15 minutes, turning and brushing again halfway.

  6. Check that they reach at least 71°C and are tender. Rest for 5 minutes before slicing.
