Remove the tough membrane from the rack if present. Season the pork ribs with the salt and black pepper.

Mix the oregano, thyme, garlic powder, sweet paprika, ginger and nutmeg; rub over the ribs.

Place the ribs in a bag with the water, massage and marinate in the refrigerator for at least 2 hours.

Preheat the air fryer to 190°C for 5 minutes. Wrap each piece in foil and cook at 170°C for 30 minutes, turning halfway.

Carefully open the foil, brush the ribs with the barbecue sauce and cook uncovered at 190°C for 12-15 minutes, turning and brushing again halfway.

Check that they reach at least 71°C and are tender. Rest for 5 minutes before slicing.
