Let’s get cooking

Method

  1. Reserve 30 g chocolate in six 5 g pieces and 10 g butter to grease six individual moulds of about 120 ml. Melt the remaining 120 g chocolate with 70 g butter over a pan of gently simmering water, then cool slightly.

  2. Whisk the eggs with the sugar. Fold in the lukewarm chocolate, salt and sifted flour until no lumps remain.

  3. Divide half the mixture between the six moulds. Place one piece of chocolate in the centre of each and cover with the remaining mixture, filling no more than three-quarters full.

  4. Preheat the air fryer to 180°C. Cook in two batches of three moulds, leaving room around them, for about 12–15 minutes per batch.

  5. The sponge around the chocolate must be cooked: test it with a skewer away from the chocolate centre. If raw batter sticks to it, continue cooking.

  6. Rest for 2 minutes, turn out carefully and serve warm: the flowing centre comes from melted chocolate.
