Pat the hake and prawns dry. Cook in a frying pan with 10 g of the olive oil for about 4–6 minutes until opaque and cooked; the fish should reach 63°C. Remove, flake and check again for bones. Chop the prawns.

In the clean pan, heat another 40 g of oil, stir in the flour and cook for 2–3 minutes. Gradually whisk in the warm milk to make a smooth béchamel.

Add the fish and prawns, salt, black pepper and nutmeg. Cook over medium-low heat for 12–15 minutes, stirring until the mixture pulls away from the base.

Spread in a shallow container, cover the surface and refrigerate once it stops steaming, within 2 hours. Chill for at least 4 hours until firm.

Shape 24 croquettes about 3 cm thick. Beat the eggs and coat with breadcrumbs, egg and another layer of breadcrumbs. Brush with the remaining 12 g of oil.

Preheat the empty air fryer for 5 minutes at 180°C and cook three batches of eight spaced-out croquettes for 10–12 minutes per batch, turning after 8 minutes. The centre should reach 74°C. Keep uncooked batches refrigerated and rest cooked croquettes for 2 minutes before serving.
