Method

  1. Chop 6 g garlic and the parsley for 5 seconds at speed 7. Scrape down, add the minced beef, breadcrumbs, eggs and half the salt. Mix for 30 seconds at speed 3, then finish combining in a mixing bowl.

  2. Shape into meatballs about 3 cm across and distribute between the Varoma dish and tray, leaving steam holes uncovered. Wash the mixing bowl.

  3. Put the onion, remaining 15 g garlic, almonds and olive oil in the bowl. Chop for 4 seconds at speed 5 and cook for 10 minutes at Varoma temperature, speed 1, using the splash protection specified for your model.

  4. Add the white wine, water, saffron, pepper, bay leaf and remaining salt. Fit the covered Varoma and cook for 30 minutes at Varoma temperature, speed 1. Check that the meatballs are fully cooked through; extend cooking if needed.

  5. Carefully remove the Varoma and transfer the meatballs to a serving dish. Remove the bay leaf, add the toasted bread to the sauce and let the bowl temperature fall to 60°C. Blend for 30 seconds, gradually increasing from speed 4 to 8 according to your model instructions. Pour over the meatballs and serve.
