Heat the oven to 210°C. Cut the onion into 1 cm rings. Coat in flour, then 50 g beaten egg and finally 60 g breadcrumbs. Place on a lined tray, brush with 15 g oil and bake for 20–25 minutes, turning halfway.

Mix the remaining 40 g breadcrumbs with the milk. Add the chicken, chopped olives and garlic, the other 50 g egg, parsley, salt and pepper. Combine without overworking and shape eight patties, 1.5 cm thick.

Heat the remaining 15 g oil in a non-stick frying pan. Cook the patties over medium heat for 4–5 minutes per side until they reach 74°C at the centre. Heat the tomato sauce in a saucepan or microwave-safe container. Serve two patties per person with the rings and sauce.
