Method

  1. Slice the mushrooms and chop the spring onion and garlic. Heat the oil in a wide casserole and cook the spring onion and garlic for 5 minutes. Add the mushrooms and cook for 7–8 minutes until their liquid evaporates.

  2. Add the ham and stir for 1 minute. Pour in the wine and reduce for 2–3 minutes. Stir in the rice for 1 minute, then add the 850 g hot water and soy sauce.

  3. Cook for 5 minutes over a medium-high heat and 13–15 minutes over a medium-low heat without stirring. Check the grains are tender, rest off the heat for 5 minutes and finish with the parsley. Divide into four portions.
