- Vinegar sherry vinegar 35 ml
- Extra virgin olive oil 50 g
- Chives 4 g
- Sweet paprika 2 g
- Parsley 3 g
- Water bean cooking water; partly drained 1000 ml
- Salt to taste 2 g

Place the fresh white beans in a saucepan with the water, peeled carrot, 150 g green pepper and 150 g spring onion in large pieces. Add some salt and simmer very gently for 30–45 minutes until the beans are tender; follow the packet timing for frozen beans.

Drain the beans and let them cool until warm. Remove and chop the cooked vegetables; they go into the salad rather than being discarded. Finely dice the red pepper, the remaining 50 g green pepper and the remaining 100 g spring onion.

Mix the vinegar, oil, sweet paprika, chopped chives and parsley and the remaining salt. Slice the cooked octopus into 1–2 cm pieces.

Gently combine the beans, cooked and raw vegetables, octopus and dressing. Divide between four plates and serve warm; if not serving promptly, cool quickly and refrigerate.
