Method

  1. Grind the almonds for 15 seconds at speed 8 and set aside. Mix the eggs and sugar for 1 minute at speed 3. Add the lemon zest and cinnamon and mix for 10 seconds at speed 3.

  2. Add the ground almonds and mix for 20 seconds at speed 3. Grease a 24 cm tin with the butter and dust with the flour; pour in the mixture.

  3. Bake at 200°C for about 25–30 minutes, until a skewer comes out clean. Cool, remove from the tin and dust with icing sugar.
