Method

  1. Chop the almonds for 4 seconds at speed 4 and set aside. Grate the Emmental for 10 seconds at speed 7 and reserve separately. Mix the eggs, natural yoghurt and softened butter for 30 seconds at speed 4.

  2. Add the flour and baking powder and mix for 20 seconds at speed 4. Add the cheese, chopped green and black olives, pine nuts, thyme, salt and pepper; mix for 10 seconds at speed 2 and finish with the spatula.

  3. Pour into a lined 30 cm loaf tin and scatter the almonds on top. Bake at 180°C for about 45 minutes, checking that a skewer comes out clean. Cool before slicing.
