Heat 50 g of the olive oil in a frying pan over medium heat, without letting it smoke. Stir in the flour and cook for 2–3 minutes. Reserve the remaining 12 g of oil for the coating.

Gradually whisk in the warm milk and beef stock. Add the finely shredded cooked beef, salt, black pepper and nutmeg. Stir over medium-low heat for 12–15 minutes until thick and pulling away from the pan base.

Spread in a shallow container, cover the surface and refrigerate once it stops steaming, always within 2 hours. Chill for at least 4 hours until firm.

Shape 24 croquettes about 3 cm thick. Beat the eggs and coat each piece in breadcrumbs, egg and another layer of breadcrumbs. Brush with the reserved 12 g of oil, dividing it between all the pieces.

Preheat the empty air fryer for 5 minutes at 180°C. Cook in three batches of eight, spaced apart, for 10–12 minutes at 180°C, turning after 8 minutes. Check that the centre reaches 74°C. Keep the remaining batches refrigerated.

Rest for 2 minutes and serve four per person. The timing includes making the filling, four hours of chilling and three batches, but not making the original stew.
