Melt the butter in a frying pan over medium heat, add the flour and stir for 2–3 minutes without letting it darken.

Gradually whisk in the warm milk to prevent lumps. Add the Serrano ham, black pepper and nutmeg. Cook over medium-low heat for 12–15 minutes, stirring, until the mixture pulls away from the pan as you draw a spatula through it. Do not add salt: the ham already supplies enough.

Spread the mixture in a shallow container, cover the surface and refrigerate once it stops steaming, never leaving it out for more than 2 hours. Chill for at least 4 hours until completely firm.

Divide into 24 portions and shape croquettes about 3 cm thick. Beat the eggs. Coat each piece lightly in breadcrumbs, then egg, then breadcrumbs again, covering every seam.

Brush all the croquettes with the olive oil, dividing it evenly. Preheat the empty air fryer for 5 minutes at 180°C. Cook in three batches of eight, spaced apart, for about 10–12 minutes at 180°C; turn carefully after 8 minutes. The centre should be hot throughout, at 74°C. Keep the uncooked batches refrigerated.

Rest for 2 minutes and serve four croquettes per person. The timing includes four hours of chilling and three batches; it may vary with basket capacity.
