Crumble the yeast into the lukewarm milk and stir to dissolve. The milk should feel warm, not hot.

Mix the flour with the milk, 50 g of egg, sugar and salt. Knead for 8 minutes, add the softened butter and knead for another 5–8 minutes until smooth and elastic.

Cover in a bowl and rise for 60–90 minutes until doubled. Divide into five equal pieces, shape into balls and flatten slightly. Cover and prove for another 40–60 minutes until puffy.

Preheat the empty air fryer for 5 minutes at 160°C. Brush the buns with the reserved 25 g of egg and scatter over the sesame. Bake in two uncrowded batches for 15–18 minutes at 160°C; the centre should be baked through and reach about 93°C. Refrigerate the second batch while it waits.

Cool the buns on a rack for 20 minutes before splitting them.
