Method

  1. Preheat the oven to 200°C. Halve the aubergines and score the flesh in a diamond pattern without cutting through the skin.

  2. Brush with half the extra virgin olive oil and season with salt and pepper. Bake cut-side up for 20 minutes.

  3. Mix the tomato sauce with the garlic and oregano. Drain the mozzarella very well.

  4. Remove the aubergines and gently press down the flesh with a spoon. Add the tomato sauce, mozzarella and Parmesan.

  5. Bake for another 12 minutes, then grill for 2–3 minutes until the cheese is golden.

  6. Rest for 5 minutes, scatter over the fresh basil and finish with the remaining olive oil.
