Let’s get cooking

Method

  1. Wash and thoroughly dry the lettuce, and thinly slice the red pepper. Cook the onion in a frying pan with 15 ml extra virgin olive oil over medium heat for about 10–12 minutes, until softened and golden. Set aside and let the excess heat dissipate.

  2. Divide the minced beef into two thin 75 g patties and season with the salt and pepper. Cook in the hot frying pan on both sides, about 5 minutes in total as a guide, until a food thermometer reads at least 71°C in the centre. Set aside on a clean plate.

  3. Pour the water into a wide dish. Soften the rice paper wrappers one at a time according to the packet instructions: they should be flexible without falling apart. Overlap four sheets slightly in a deep plate, letting the edges hang over. Keep the fifth sheet for sealing.

  4. Put the red pepper, lettuce and Serrano ham in the centre. Stack the two patties on top, distributing the cheddar cheese between them and over the top, then add the onion. Fold the rice paper wrapper edges towards the centre without pulling hard enough to tear them. Soften the fifth sheet, place it over the join and press the edges to seal the parcel.

  5. Beat the egg in one plate and crush the cornflakes into small crumbs in another. Carefully coat the sealed parcel with the egg, then the cornflakes, pressing gently to cover it. Spray the outside with some of the remaining 2 ml oil, reserving the rest to grease the basket.

  6. Preheat the air fryer according to its manual to 200°C. Place the parcel in the basket, lightly greased with some of the stated oil, without loose paper liners. Cook for about 10 minutes, until the coating is golden and the egg is cooked, checking from minute eight. If still pale, continue one minute at a time. Serve immediately, whole or cut in half.
